You might try this new product that just came out called Vine-X: http://www.vine-x.com
You just dab it on the problem vines and it soaks into their system, killing it at the roots. But because you just dab it on, it doesn't effect the other plants in the area. I just ordered some for my rampant wild grape vine, so I don't know how well it works yet - but I'm really hoping it works as advertised! Poison ivy is on the list of plants it's approved to kill, so it might work for your situation.
