Washing your sheets should be sufficient. In theory, one could have the oil go from the sheets to the mattress and back again but I believe the odds would be pretty slim. Urushiol oil is sticky and likely would be clinging to the sheets.

Is this your first time with a poison ivy / urushiol oil rash? The reactions vary from the first time to other times and I've read that its not unusual to have additional outbreaks. Also, depending on oil concentrations and thickness of the skin you'll notice outbreaks over a period of time. Scratching also can produce additional rash. There are many factors here and it may not be just recontamination from the original source.
