Hi Linda -

I love these types of questions as I have to work and learn to find an answer. It turns out that bamboo (Bambusa vulgaris) has minute bristles which penetrate the skin and cause irritation. Here is some information from the Botanical Dermatology Database:

Young, rapidly developing poles should not be handled, or if some particular reason makes this necessary, the hands should be kept away from the eyes. The brown colouring of the papery collars is due to minute brown bristles, which are easily detached, penetrating the flesh and causing considerable itching and discomfort (Allen 1943). Such bristles from bamboo shoots are also irritant to the gastrointestinal tract and have been used for criminal poisoning (Burkill 1935).

I have found some other mentions of these bristles (hairs in the other text) causing irritation / dermatitis including technical reference. What I have not found though is any discussion on how to treat this. Based on what I've read about similar reactions (such as stinging nettles), it would seem that you are sensitive. If you find that the condition is of concern or becomes unbearable, you should consult your doctor.
